Informazioni Generali

BISTROT e BRUSCHETTERIA GOURMET, che eleva cibi semplici ai valori dell'alta cucina, strizzando l'occhio anche a principi GREEN-FRIENDLY.
Da Bruscè potrai trovare gustose e fresche insalatone, zuppe o piatti del giorno ( a base di orzo, farro riso, pasta da grani antichi, pesce, verdure e legumi) selezionati da noi in base alla stagionalità.

Le materie prime, che avranno quindi nella stagionalità la parola d'ordine, saranno ricercate e di qualità, BIOLOGICHE E A KM 0, ove possibile.
I formaggi, l' olio evo, l'aceto balsamico sempre bio certificati, e a km0; i PESCI saranno scelti, compatibilmente con quanto il mercato ittico bolognese offre, con CRITERI DI SOSTENIBILITA'.
I VINI, tutti certificati biologici e del territorio, e le birre assolutamente artigianali.

PRANZO, CENA, MERENDA O APERITIVO?
Abbiamo bruschette a misura di ogni appetito ( con pane a scelta tra 5 varietà, tutte di grani antichi e a lievitazione naturale con lievito madre): il crostone , un vero e proprio piatto unico, e le bruschette per accompagnare una buona bottiglia di vino o una delle nostre selezionate birre artigianali. E per chi a pranzo o cena vuole un alternativa, Bruscè propone ottime INSALATONE gourmet, ZUPPE di verdure fresche e di stagione, cereali antichi e/o legumi, o PIATTO UNICO DEL GIORNO a base di un cereale, verdure, mousse e a scelta pesce/formaggio/proteina vegana.

Noi abbiamo scelto di NON USARE CARNI e derivati tra le nostre materie prime, e abbiamo deciso di dedicare attenzione anche a chi per necessità o scelta di vita ha abbracciato una DIETA DIVERSA. Tra le nostre proposte non mancheranno mai offerte VEGAN e GLUTEN FREE
(con una opzione di pane certificato), ma anche una scelta senza lattosio o uova.

From Bruscè You will also can find tasty and fresh salads, soups and main dishes of the day.

The raw materials, which will have the password in the seasonality , will then be researched and quality, ORGANIC AND A KM 0, where possible.
The cheeses, extra virgin olive oil, balsamic vinegar, will always be certified organic; the fish will be chosen, in line with what the Bolognese offers the fish market, with the PRINCIPLES of SUSTAINABILITY
WINES are all certified organic and local, and beers are absolutely craft .

LUNCH OR APETIZER?
we have bruschetta to fit every appetite: the crust, a real complete dish, and mini bruschetta to accompany a good bottle of wine or one of our selected beers.
And for those who want an alternative lunch or dinner , Bruscè serves delicious gourmet SALADS, SOUPS with fresh vegetables, ancient grains and legumes or daily dish with vegetable, cereal, mousse a choice of and fish/cheese/vegan proteins

We chose to NOT use meat and meat products in our raw materials, and we have decided to devote attention also to those people who, by necessity or choice of life, have embraced a DIFFERENT DIET. In our menu never miss VEGAN and GLUTEN FREE proposals (with a certificate bread option) , and also lactose or eggs free.
