Salza nasce a Torino nel 1898 con il nonno Silvio.
Negli anni Venti il timone dell’azienda è in mano al figlio Federico, che sposta l’attività a Lucca e Viareggio fino all’arrivo a Pisa, nel 1927.
Qui la famiglia Salza porta quel bon ton tutto piemontese destinato a fare della pasticceria — subito famosa per i suoi prodotti e le scintillanti vetrine — un elemento distintivo di assoluto prestigio. Una qualità della quale si accorgono ben presto anche i Savoia nei loro lunghi soggiorni a San Rossore, tanto che dal 1931 la ditta Salza può fregiarsi del titolo di «costante fornitore della Real Casa» .
Con il dottor Silvio l’azienda di famiglia allarga il tradizionale e consolidato campo di attività diventando leader in Italia nel settore del catering. Tra i suoi clienti può vantare tutti i grandi nomi della finanza, dell’economia e del jet-set, da Gucci ai principi Colonna, da Bulgari a Fendi, nonché Carlo e Diana d’Inghilterra ai quali Salza serve una cena da favola quando la coppia reale è ospite in Italia nel 1988.
Sempre con classe e stile inconfondibili, il marchio della pasticceria pisana è presente con successo a eventi di ogni genere. Oggi queste attività sono condotte con immutata passione e competenza da uno dei tre figli di Silvio Salza, Federico, e dalle nipoti Virginia e Federica che gestiscono il settore del catering e banqueting in Italia e all’estero.
